辣椒粕多糖提取与分离及抑菌活性研究
Extraction,Isolation,and Antimicrobial Activity of Polysaccharides from a Chili Meal

Abstract
The study aimed to extract the different polysaccharide components from the waste chili meal and explore the monosaccharide compositions and antibacterial activities.The chili meal polysac-charide(CMP)was extracted using water extraction,followed by graded alcohol precipitation with ethanol concentrations of 40%,60%,80%,and 90%,obtaining CMP40,CMP60,CMP80,and CMP90.Afterward,the molecular mass of the CMP were determined by high-performance gel perme-ation chromatography.Monosaccharide compositions were determined using high-performance liquid chromatography.Finally,the growth of Escherichia coli,Salmonella,Staphylococcus aureus,and Lactobacillus bacteria was evaluated using the absorbance method.The results showed that the yields of the CMPs were 22.452%,5.000%,7.197%,and 0.664%,respectively.The CMP40 was mainly composed of macromolecular polysaccharides with a homogeneous distribution and a molecular mass(Mw)of 78.862 ku.The CMP60 was mainly composed of the homogeneous distribution polysaccha-ride with Mw of 17.785 ku.The CMP80 was composed of four polysaccharide molecules with Mw of 1.615-23.384 ku.The CMP90 was composed of two small-molecule polysaccharides with Mw of 2.617 ku and 1.642 ku.In addition,the monosaccharide composition of the CMP40 mainly consisted of galacturonic acid(69.397%)and glucose(18.009%).The monosaccharide composition of the CMP60 mainly consisted of galacturonic acid(29.037%),glucose(32.716%),and galactose(17.989%).The monosaccharide composition of the CMP80 mainly consisted of galacturonic acid(29.037%),glucose(32.716%),galactose(17.989%),and arabinose(16.467%).The monosac-charide composition of the CMP90 mainly consisted of glucose(80.362%).The in vitro bacteriostatic tests showed significant inhibitory effects of all CMP components on Escherichia coli,Salmonella,Staphylococcus aureus,and Lactobacillus(P<0.05).The inhibitory effects increased with polysac-charide concentration,with CMP80 exhibiting the most pronounced antibacterial activity.The study provides an effective method for the high-value utilization of chili meal.关键词
