Effect of Saline Water Stress on Metabolites of Cucumber Fruit

Abstract
The rational utilization of saline water can improve the quality of fruits on the basis of conserving freshwater resources.To investigate the effects of saline water stress on cucumber at the metabolite level,a cucumber study was conducted in April 2022.This study used 'Jinyou 209' cucumber as the research object,treated with 5 g·L-1 saline water stress,and compared with conventional freshwater irrigation.This study was based on widely targeted metabolomics analyses and volatile metabolomics analysis to explore the changes in metabolites of cucumber fruit under saline water stress.For the widely targeted metabolome,321 differential metabolites were screened under saline water stress.Amino acids and derivatives are the main upregulated metabolites,while lipids are the main downregulated metabolites.The various metabolites of amino acids and derivatives are used as osmolytes,antioxidants,etc.to alleviate saline water stress on cucumbers,and the various metabolites of lipids are more commonly used to synthesize volatile organic compounds under saline water stress.For the volatile organic compounds,a total of 119 differential metabolites were screened under saline water stress,of which 110 were upregulated,mainly terpenes.The upregulated volatile metabolites provide flavor characteristics such as woody,fruity,sweet,and citrus in cucumber fruit.Saline water stress improves the flavor quality of cucumber fruits by affecting the metabolism of amino acids and derivatives,lipids,terpenes,and other compounds.关键词
