摘要

Abstract

Beixi Oolong tea is a refined tea made by technology of southern Fujian Oolong tea production on the basis of ensuring the high quality of raw materials.After blending,screening,air classification,color selection and picking,it is made by light fire and then baking.Beixi Oolong tea is particular about the selection of raw tea,and the tea garden must be located in the high mountain area with good ecological environment and high soil organic matter content.'Tieguanyin' should be the main cultivar,and 'Mingke No.1','Jinmudan','Dangui' and other high-flavor cultivars should be appropriately matched.This paper analyzed the quality causes of high-quality Beixi Oolong tea from the aspects of tea base construction,primary processing technology and refining technology,so as to provide reference for actual production and processing.
