涠洲岛4种常见经济双壳贝类闭壳肌营养成分及重金属含量分析
Nutrient Composition and Heavy Metal Content Analysis of Ad-ductor Muscle in Four Common Economic Bivalves around the Weizhou Island

Abstract
In order to understand nutrient composition and heavy metal content of four common species of e-conomic bivalves,this study detected the basic nutritional components,amino acid contents and heavy metal contents of the adductor muscles of four shellfish,namely Ruditapes variegata,Meretrix meretrix,M.lyra-ta,and Paphia undulata,in the sea area of Weizhou Island.The amino acid profile was evaluated based on the Amino Acid Score(AAS),Chemical Score(CS),and Essential Amino Acid Index(EAAI).The health risks associated with these bivalves were assessed based on the single factor pollution index(Pi),comprehen-sive pollution index(P),Target Hazard Quotient(THQ),and Total Target Hazard Quotient(TTHQ).The results revealed the moisture,crude protein,crude fat,and crude ash content was 83.80%,11.37%,1.51%,and 2.77%in R.variegata,80.67%,10.85%,1.00%,and 1.34%in M.meretrix,81.17%,13.05%,1.14%,and 1.88%in M.lyrata,and 77.84%,10.59%,0.53%,and 1.37%in P.undulata,respectively.A total of 17 amino acids were detected,including 7 Essential Amino Acids(EAA),4 Delicious Amino Acids(DAA),3 Semi-Essential Amino Acids(SEAA),and 3 Non-Essential Amino Acids(NEAA).The first limit-ing amino acids for the four species,according to the AAS model,were Ile,Val,Val,and Thr,while the CS model identified Met+Cys as the limiting amino acids.The heavy metal(As,Cd,and Ni)content exceeded the standard limits(As≤0.100 mg/kg,Cd≤0.100 mg/kg,Ni≤0.300 mg/kg).The evaluation of heavy met-al pollution showed that As,Ni,and Cd were the main pollutant elements in the four species.The results of the health risk assessment revealed that the THQ of As in all the four bivalve species exceeded 1 for both a-dults and children,and the TTHQ also exceeded 1,indicating the potential health risks of long-term con-sumption of these bivalve species for both adults and children.关键词
