The Impact of Pulsed Light on the Inactivation Kinetics of Aspergillus flavus Spores and the Quality of Peanuts during Storage

Abstract
Pulsed light(PL)is an emerging non-thermal fungicide technology used for microbial inactivation.To study and predict the fungicide effect of PL on Aspergillus flavus(A.flavus)spores in peanuts,peanuts were inoculated with A.flavus and treated with different pulsed fluences.The fungicide effect was analyzed kinetically by using different models(Log-linear,Weibull,and Weibull+Tail models).The optimized pulsed fluence was used for peanut storage to explore the impact of PL on peanut quality.The results showed that peanuts with an initial colony number of 6.57 lg CFU·g-1 were treated with 18 J·cm-2 of pulsed light and the colony count was reduced by 1.87 lg CFU·g-1 compared to the untreated group.The Weibull+Tail model was more accurately modeled the survival curve of A.flavus(R2=0.996 1)and the optimal pulsed fluence was determined at 13.5 J·cm-2.After treatment with 13.5 J·cm-2 of pulsed light,the water activity during peanut storage was controlled between 0.59 and 0.66,the acid value and peroxide value were reduced by 11.58%and 3.45%compared with the untreated samples.The analysis of microbial diversity on the surface of peanuts indicated that the species abundance of Aspergillus and Fusarium was significantly reduced.61 kinds of volatile flavor substances were detected through gas chromatography-mass spectrometry(GC-MS)analysis,with higher relative contents of alkanes,alcohols,and olefins.More volatile components that gave peanuts a pleasant aroma were produced after treatment of PL.In conclusion,pulsed light can be used as an effective technology to kill Aspergillus flavus,which helps to maintain the quality of peanuts and prolong their shelf life.This study provides the theoretical basis and technical guidance for the application of pulsed light technology in peanut processing and storage.关键词
