摘要

Abstract

Tea blending is an important technical means to stabilize tea quality,innovate tea product flavors,improve tea economic benefits and meet market demand.With the transformation of the tea industry and the emergence of new formats and consumption,there have been significant changes in tea blending technology and its application fields in recent years.This article analyzes the research progress of tea blending technology in terms of digital technology for sensory evaluation of tea,digital analysis technology of tea quality,digital judgment technology for tea quality chemistry,and construction method of multi-dimensional data blending strategy model for tea,it also introduces the application status of tea blending technology from three aspects:standardized blending of traditional tea,differentiated blending of characteristic tea,and fusion blending of tea+N,and makes prospects for the development trend of tea blending technology,providing reference for future innovation and application research in tea blending technology.
