Research on Sugarcane Juice Lemon Compound Beverage and Its Shelf Life

Abstract
This article explored the optimal formula for sugarcane juice lemon compound beverage and predicted its shelf life.Using a mixed design approach,a composite beverage formula was designed using sugarcane juice,lemon juice,and water filtered through ceramic membranes as raw materials,and the optimal ratio was determined through sensory evaluation.Using ASLT method,the pH,soluble solid solution content,total phenolic content,clarity,browning degree,microbial indicators,and sensory quality changes of beverages were monitored under storage conditions of 37,27 and 4℃,and the shelf life was predicted based on chemical kinetics principles.The results showed that the optimal formula ratio of sugarcane juice,lemon,and water was 50︰3︰47,and the longest shelf life under low-temperature storage was about 210 days.This study adopts a mixed design method to design the formula of sugarcane juice lemon composite beverage,and uses ASLT method to predict the shelf life of the composite beverage,providing a research basis for further industrial production.关键词
