不同品种的五常地区大米品质及滋味差异分析
Analysis of Rice Quality and Taste Difference of Different Varieties in Wuchang Area

Abstract
In order to explore the difference between Wuyoudao4 in Wuchang area and the five rice varieties easily confused with its appearance,the market economic value of Wuyoudao4 rice brand was protected.The difference analysis,correlation analysis and variety classification of rice sample quality and taste index were carried out.The results showed that the apparent properties of Wuyoudao4 rice were similar to other rice varieties,indicating that Wuchang rice was easily confused among different varieties.The water content,protein content and amylose of Wuyoudao4 were different from other rice varieties,and the food taste score of Wuyoudao4 was 80.30,which was higher than other rice varieties.Through principal component analysis,the electronic tongue could distinguish different rice raw materials and cooked rice well.The correlation analysis between electronic tongue and food taste score showed a significant positive correlation in appearance,taste and comprehensive score,and the correlation coefficients were 0.98,0.95 and 0.86,respectively.On this basis,the difference data were done further discriminant analysis,the difference index was screened,and then 6 varieties of rice were identified.It can distinguish six different varieties of rice in the Wuchang area.关键词
