摘要

Abstract

Currently,China's pig breeding industry is heavily reliant on imported core pig breeds,and the excellent genetic resources of local pig breeds remain underutilized.It is imperative to seek breakthroughs in the accelerated breeding of new pig breeds(strains),including the development of high-quality pork production and the promotion of local pig genetic innovation.Xinjiang Black Pig is an important member of China's local pig breeds,favored by consumers for its unique meat flavor and nutritional value.The meat of Xinjiang Black Pigs presents a bright red color,which not only stimulates appetite but also indicates the freshness and healthiness of the meat.However,scientific research on the muscle quality of Xinjiang Black Pigs is still insufficient,which to some extent restricts the development of its industry.Therefore,this study aims to comprehensively and deeply explore the natural science basis of the muscle quality of Xinjiang Black Pigs,providing theoretical support and technical guidance for its industrialization.
