摘要

Abstract

Soy protein isolate(SPI)is widely used as a carrier raw material because of its good functional characteristics.However,the carrier prepared by using SPI alone has some problems,such as low encapsulation efficiency and poor stability.Researchers can optimize the functional properties of SPI by modifying and regulating its structure.For specific needs and target properties,different modification strategies can be used for targeted modification of SPI to construct diverse carriers with differentiated encapsulation capacities.Common carriers prepared from SPI include microcapsules,pickering emulsions and microgels,which can effectively protect active substances,improve resource utilization and broaden the application of SPI in food and medicine fields.In this paper,the research progress of physical,chemical,biological and compound modification methods of soybean protein isolate at home and abroad in recent years is systematically reviewed.Also,the application of its carriers in the field of food and medicine is reviewed.This provides reference for high-value deep processing and comprehensive utilization of SPI,is of great significance to improving the utilization rate of SPI resources and improving the quality of food and medicine.
