基于HS-SPME-GC-MS联用技术的茉莉花挥发性代谢组学特征解析
HS-SPME-GC-MS analysis of volatile metabolomics profile in Fuzhou jasmine flower

Abstract
[Objective]This study aimed to systematically analyze the compositional characteristics of volatile compounds in Fuzhou jasmine flowers,identify key aroma-contributing substances,and explore their biosynthetic metabolic pathways,thereby providing a theoretical basis for understanding the molecular mechanisms of jasmine aroma formation.[Method]Headspace solid-phase microextraction(Headspace solid-phase microextraction,HS-SPME)coupled with gas chromatography-mass spectrometry(Gas chromatography-mass spectrometry,GC-MS)was employed to analyze the volatile components of Fuzhou double-petaled jasmine flowers.Semi-quantitative analysis,odor activity value(Odor activity value,OAV)calculation,and principal component analysis(Principal component analysis,PCA)were applied to evaluate key aroma compounds.The interaction of aroma substances was analyzed by correlation heat map,and the biosynthesis pathway of volatile components was further analyzed by metabolic pathway analysis.[Result]A total of 58 volatile organic compounds(VOCs)were identified,primarily including terpenes,esters,alcohols,and nitrogen-containing compounds,with linalool(14.65%),(Z)-3-hexenyl benzoate(12.12%),and α-farnesene(11.25%)being the most abundant.OAV and PCA analysis showed that α-farnesene and linalool had a key contribution to the characteristic aroma of jasmine flower,and terpenes were significantly positively correlated with esters,and the synergistic effect was beneficial to the release of jasmine aroma.Metabolic pathway analysis showed that the formation of jasmine aroma involved key metabolic networks such as secondary metabolite synthesis,sesquiterpene and triterpene compound formation.[Conclusion]The main aroma components in the volatiles of Fuzhou jasmine flower are linalool and α-farnesene.The synergistic effect of terpenes and esters is beneficial to enhance the aroma volatility.The synthesis of these volatile substances mainly depends on phenylalanine,tyrosine and tryptophan metabolic pathways.关键词
