Preparation of CaO2@PVP/EA/CMC-Na Coating and Its Preservation Effect on Litchi

Abstract
In order to enhance the preservation effect of litchi during storage period,a low-cost,safe and sustain-able CaO2@PVP/EA/CMC-Na composite coating material was prepared.Using Guiwei litchi from Genzi Town,Maoming City,Guangdong Province as an example,a control group treated with pure water and a composite coating treated group were set up to explore the preservation effect of the coating at room temperature.We analyzed the changes in appearance quality,fruit color,fruit weight loss rate,pulp soluble solids and soluble acid(TA)content,pulp malondialdehyde(MDA)content,pulp superoxide anion(O2-)content,pulp vitamin C content,and DPPH radical scavenging ability of pericarp during litchi storage.The results showed that the control group had a small area of browning starting from day 1,while the treated group began browning from day 4.The coating can effectively slow down the rate of quality decline in litchi fruits(P<0.05 or P<0.01)and maintain a high content of soluble solids in the short term.The TA content in the treated group was consistently higher than in the control group.The coating can reduce the generation of MDA.On the 4th and 5th days,there was a very significant differ-ence(P<0.001)in the production rate of O2-in the peel between the control group and the treated group.On the 6th day of storage,the vitamin C content in the treated group was 0.03%higher than that in the control group(P<0.001).From the 3rd to the 6th day,the DPPH clearance rates of the treated group were 8.83%,9.31%,5.59%,and 7.03%higher than those of the control group.These results indicate that the prepared CaO2@PVP/EA/CMC-Na composite coating effectively delay the aging of litchi fruits,providing a basic reference for the study of litchi preservation.关键词
