Abstract

In recent years,with the development of economy and the improvement of people's living standards,people's demand for staple food products such as noodles,dumplings,Mantou has gradually changed from food and clothing to nutrition,and has shown a diversified development trend.The proportion of multi-purpose,high-quality special-purpose flour consumption is rising,which is popular with consumers.Strong gluten wheat,with its advantages of good gluten quality and high protein content,is suitable for processing various types of flour products and has become an important raw material variety for domestic flour enterprises.As an advantageous production area for strong gluten wheat,Hebei province has a planting area of 333.3 thousands hectares in 2022,with obvious advantages in planting area,variety quality resources,and product processing,and there is strong demand in the consumer market,providing good development opportunities for Chinese style pastry food processing.However,there is a demand mismatch problem in the upstream and downstream of the current industrial chain,which restricts the development of the strong gluten wheat industry.There is inconsistency in the demand for wheat quality among various units of the industrial chain,upstream breeders and growers focus on high and stable yield,disease resistance,and stress resistance of wheat,while deviating from the actual needs of processing and consumption;midstream flour processing enterprises focus on color,stability time,ductility,and stability;downstream consumers focus on the cooking quality,flavor,taste,and other edible qualities of food.This article based on user orientation and focused on the quality requirements of Chinese pastries for strong gluten wheat,firstly,it summarized the current development status,advantages,and existing problems of the strong gluten wheat industry in Hebei province;by selecting mid-stream users in the industry chain-flour processing enterprises and end users-food consumers as the research objects,conducting on-site research,the quality needs were integrated into all aspects of production,and in-depth analysis was conducted on the quality needs of acquisition,processing,and different products;at the same time,the binary Logistic regression analysis method was used to analyze the influencing factors of consumers'willingness to purchase specialized powders,and finally proposed countermeasures and suggestions.
