Abstract

In order to explore the differences in aroma characteristics of Yunnan black tea under different fertilization treatments,the aroma characteristics of Yunnan black tea processed with spring fresh leaves of'Yunkang 10'treated with bio-organic fertilizer(TB)and no fertilizer(CK)were analyzed as test tea samples.The sensory results showed that the tea samples treated with bio organic-inorganic compound fertilizer(TI)had the strongest sweet aroma with floral,fruity,and woody notes,and the highest aroma score;The results of PCA,OPLS-DA and cluster analysis showed that Yunnan black tea with different fertilization treatments could be clearly distinguished;The results of HS-SPME-GC-MS showed that a total of 616 volatile metabolites were identified in three samples of Yunnan black tea,and 170 differential volatile metabolites were obtained using VIP>1,P<0.05,FC≥2 or≤0.5 conditions.The rOAV assessment revealed that the key volatile metabolites(rOAV>100)were 2-acetylthiophene,(6Z)-nonen-1-ol,and 2-acetylyl.The content of volatile compounds in Yunnan black tea showed an upward trend,including beneficial aroma substances such as linalool,geraniol and cis-6-nonen-1-ol,and the effect of bio-organic-inorganic compound fertilizer on improving the aroma level of Yunnan black tea was stronger than that of bio-organic fertilizer.
