组学方法在水产品质量安全研究中的应用
Application of omics approaches in quality and safety studies of aquatic products
摘要
Abstract
The development of highly accurate and sensitive analytical techniques has become crucial for ensuring the quality and safety of aquatic products amid rising demand.This review highlights the application of omics technologies,including metabolomics,proteomics,lipidomics,and metagenomics,in studying the aquatic product quality and safety.By integrating classical microbiological methods with quality indicators,omics technologies effectively assess the safety,authenticity,and traceability of aquatic products.Metabolomics offers significant advantages in quality control,patho-gen and spoilage microorganism detection,and the analysis of chemical contaminants and veterinary drug residues.Pro-teomics plays a crucial role in identifying microbial pathogens during the processing and storage of aquatic products.In the future,the development of biomarkers and further integration of omics technologies will enhance the management systems for aquatic product safety.[Chinese Fishery Quality and Standards,2025,15(2):49-57].关键词
