基于温湿度精细调控的烤烟新品系赣烟157烘烤工艺优化
Optimization of Curing Process in New Flue-Cured Tobacco Line Ganyan 157 via Stepwise Temperature-Humidity Regulation

Abstract
To optimize the curing process for Ganyan 157,a new Jiangxi specialty flue-cured tobacco line,and address is-sues such as in coordination between yellowing and dehydration,green veins in lower leaves,and grayish discoloration in upper leaves,this study conducted curing experiments in Xiajiang County in 2022 based on the synchronous preheating low-humidity yellowing process.Three key temperature and humidity treatments were established:CK(synchronous preheating low-humidity yellowing process,with temperature-controlled stages at 36℃/38℃/42℃/48℃/54℃during yellowing and color-fixing),T1(temperature-controlled stages at 38℃/42℃/45℃/48℃/54℃during yellowing and color-fi-xing),and T2(temperature-controlled stages at 38℃/40℃/42℃/45℃/48℃/50℃/54℃during yellowing and color-fixing).Comparative analysis of cured leaf quality under different treatments was performed.The results showed that,com-pared with CK,the T1 treatment increased the average total appearance quality score of cured leaves by 2.83 points and the average total sensory evaluation score by 1.7 points.The T2 treatment significantly improved the appearance quality of leaves across all stalk positions,effectively reduced green veins in lower leaves and grayish discoloration in upper leaves,and enhanced color uniformity,oil content,and color intensity.It also promoted starch degradation,brought total sugar,re-ducing sugar content,and sugar-to-alkaloid ratio closer to the optimal range,increased the total content of volatile aroma compounds and the total sensory evaluation score.Improvements in aroma quality,aroma quantity,and aftertaste were par-ticularly notable.Comprehensive analysis indicates that the T2 treatment,through precise stepwise temperature control and intermittent moisture removal,effectively coordinates leaf yellowing and dehydration,significantly enhancing the overall quality of the cured tobacco.These findings provide a reference for optimizing flue-curing technology in rainy ecological re-gions.关键词
