摘要

Abstract

With the aim of exploring the differences in quality characteristics among different foxtail millet varieties,in this study,a standard evaluation system of quality was established,then varieties with excellent quality were screened,nine foxtail millet varieties from Lingchuan county(Jincheng city,Shanxi province)were used as materials,and 32 related indicators of nutritional quality(moisture,protein,crude fat,starch,fiber,amylose,and 15 kinds of amino acids),appearance quality(L*,a*,b*,and CCI),and cooking quality(seven RVA values)were systematically analyzed,comprehensive evaluation on millet quality of different foxtail millet varieties was conducted by principal component analysis and membership function method.The results showed that there was significant difference in millet quality indicators among different varieties.Through correlation analysis and principal component analysis,protein,fat,lysine,proline,orange index,peak,and setback were determined as the core indicators for the evaluation of millet quality,a millet quality evaluation model was established,and the top two foxtail millet varieties(Changgu 4 and Changsheng 16)with comprehensive scores were screened out,the result was consistent with that of the membership function evaluation and cluster analysis,showing that the comprehensive quality of the two foxtail millet varieties was excellent.
