Abstract
[Objective]To determine the best storage time of reconstituted stem,and study the changes of the physicochemical properties and sensory quality of reconstituted stem during storage.[Method]In the constant temperature and humidity room of the warehouse,the compara-tive analysis was conducted on the physical indices,conventional chemical components,and sensory quality of reconstituted stem at different storage time.[Result]The water content,filling value,ISO whiteness and total soluble sugar in the reconstituted stem products changed obvi-ously with the increase of storage time,but the changes of pH,the content of total alkaloids had no obvious change.The sensory quality of re-constructed stem changed significantly after 270 days.[Conclusion]The suitable storage time for reconstituted stem was 180-270 days.关键词
