福鼎槟榔芋中氨基酸组成成分分析与综合评价
Composition analysis and comprehensive evaluation of amino acids in Fuding betel nut taro

Abstract
[Objective]Explore the characteristics of amino acid composition in Fuding betel nut taro and its nutritional value,providing references for the selection of high-quality varieties and the development of resources.[Method]Determine the amino acid contents in Fuding betel nut taro from 36 sampling points,evaluate the nutritional value using amino acid ratio coefficient method,and performe correlation analysis and cluster analysis on amino acid contents.[Result]A total of 16 amino acids were detected in 36 Fuding betel nut taro samples.The average total amino acid content was 20.23 mg/g.Among them,aspartic acid had the highest concentration(3.33 mg/g).The amino acid score(SRC)of Fuding betel nut taro was 54,with methionine identified as the first limiting amino acid.Within the total amino acid content,essential amino acids accounted for 37.9%;medicinal amino acid and pediatric compound amino acid injection accounted for 61.9%and 44.7%,respectively;flavor amino acid,sweet amino acid,bitter amino acid and sour amino acid accounted for 50.6%,38.0%,36.0%,and 33.5%;aromatic amino acids accounted for 10.9%.The correlation analysis results indicated that all amino acids exhibited highly significant correlations,except for methionine,glutamate and valine.The hierarchical clustering heatmap segregated the 36 samples into two clusters,with the Dayangtou(Guanyang town)samples distinctly grouped alone,demonstrating both the highest amino acid content and optimal quality parameters.[Conclusion]Fuding betel nut taro contains a complete profile of amino acids,with abundant medicinal amino acids and pediatric compound amino acid injection,demonstrating superior and unique nutritional value.关键词
