SDF-C3G复合物的制备、结构表征及抗氧化活性研究

Abstract
To prepare functional dietary fiber with better functional effect,the soluble dietary fiber-cyanidin-3-glucoside(SDF-C3G)complex was prepared by isothermal adsorption method.Fourier transform infrared spectroscopy,X-ray diffraction,gel permeation chromatography,high performance liquid chromatography,thermogravimetric analyzer and scanning electron microscope were used to characterize the structure and study the antioxidant activity in vitro.The results showed that the functional groups of SDF and C3G complex changed and ester bonds were generated.The monosaccharide types of SDF-C3G complex did not change,and the monosaccharide composition ratio changed.The molecular weight of SDF-C3G complex increased,Mw was 129 766 Da,and the large molecular weight components increased,accounting for 52.77%.The crystallinity of SDF-C3G composite decreased,and the crystallinity was 34.35%.The thermal stability of SDF-C3G complex decreases.The particles of SDF-C3G complex became larger and aggregate appeared,and the antioxidant capacity of SDF-C3G complex was significantly improved.SDF and C3G had synergistic antioxidant effect.SDF-C3G complex has stronger antioxidant activity,higher potential value,and is more widely used in functional foods.关键词
