Comparison of Quality and Antioxidant Properties of Potatoes with Different Tuber Sizes and Anthocyanin Content

Abstract
Toenhance the utilization and evaluate the storage quality of colored potatoes,five purple-fleshed and five red-fleshed potato cultivars with anthocyanin distribution gradients ranging from 0%to 100%were selected for this study.Changes in anthocyanins,starch,reducing sugars,total phe-nols,total flavonoids,DPPH·scavenging capacity,and ferric reducing antioxidant power(FRAP)in these colored potatoes of different tuber sizes were analyzed at harvest and after 60 days of storage at 7℃.The results showed that as the anthocyanin distribution gradient increased,tubers weighing more than 200 g had higher anthocyanin content at harvest.For the same cultivar,tubers weighing more than 200 g had higher starch content and lower reducing sugar content compared to those weig-hing 0-50 g.Compared to cultivars with low anthocyanin distribution(e.g.,P0 and R0),0-15 g tubers that had high anthocyanin distribution(e.g.,P4 and R4)had higher total flavonoid content,DPPH·scavenging capacity and FRAP values.After 60 days of storage at 7℃,all colored potato cultivars and tuber sizes exhibited decreased starch content alongside increases in anthocyanins,reduc-ing sugars,total phenols,total flavonoid content,DPPH·scavenging capacity,and FRAP values.In summary,selecting colored potatoes with tubers weighing more than 200 g and having P2-P5 or R2-R5 anthocyanin distributions can effectively enhance anthocyanin extraction efficiency and pre-serve storage quality.Cultivars with high anthocyanin distribution in tubers weighing 0-15 g are suit-able as raw materials for extracting natural antioxidants due to their high antioxidant content and ac-tivity after harvest and storage.关键词
