Abstract

This study aims to explore the effects of different volume fractions of hydrogen-rich water(HRW)on the growth and quality of peanut sprouts,with the objective of providing a theoreti-cal basis for the application of HRW in the high-quality cultivation of peanut sprouts.Using Huayu25 as the experimental material and adopting the hydroponic method,four volume fractions(25%,50%,75%,and 100%)of HRW(dissolved hydrogen concentration as 1.6 mg/L)were set,and the treat-ment without HRW addition served as the control.The study investigated the changes in the growth(sprout length,root morphology,fresh mass)of peanut sprouts,antioxidant substances(superoxide dis-mutase(SOD),peroxidase(POD),catalase(CAT),peroxidation products(superoxide anion(O2-),hy-drogen peroxide(H2O2),malondialdehyde(MDA),osmotic adjustment substances(proline),and quality(vitamin C(VC),soluble protein,soluble sugar,soluble solids)under different volume fractions of HRW.The results indicated that 50%HRW significantly increased the sprout length,main root length,total root length,total root surface area,and total root projection area of peanut sprouts.Meanwhile,it significantly en-hanced the activities of SOD,POD,and CAT,the content of osmotic adjustment substances,the contents of vitamin C,soluble sugar,soluble protein,and soluble olids.In addition,it significantly reduced the contents of superoxide anion,hydrogen peroxide,and malondialdehyde.Therefore,it can be concluded that 50%HRW significantly promoted the growth of peanut sprouts,increased biomass accumulation,enhanced an-tioxidant capacity,and improved the quality.
