Abstract

To enhance the storage stability of coated peanuts,edibleα-lipoic acid chitosan(ALA-CS)composite films were prepared using chitosan as the matrix andα-lipoic acid as functional modifier via the solution casting method.The study analyzed factors influencing the mechanical properties of ALA-CS films and investigated the effects of ALA/CS molar ratios on film characteristics,including water content,swelling degree,solubility,and water vapor permeability(WVP).Microstructure and molecular mechanism of interactions were characterized using scanning electron microscopy(SEM)and Fourier-transform infrared spectroscopy(FT-IR),while antioxidant activity and efficacy in protecting coated peanuts were evaluated.Re-sults demonstrated that the composite film with ALA/CS molar ratio of 1∶5 exhibited the optimal perform-ance:water content and WVP decreased significantly(P<0.05),and swelling degree and solubility reduced to 29.42%and 27.63%,respectively.FT-IR confirmed that lipoic acid bound to chitosan through hydrogen bonds and amide covalent bonds,while SEM revealed that a dense lamellar structure effectively masked the pungent odor of ALA and enhanced the stability of the composite films.The ALA-CS film showed significantly higher DPPH free radical scavenging rate(72.5%)and Fe3+reducing power than pure chitosan film,indicating it pos-sesses dual functionality as a physical barrier and chemical antioxidant.After 40 days of accelerated oxidation at 65℃,the peroxide value of ALA-CS coated peanuts(0.13 g/100 g)was significantly lower than that of uncoated peanut(0.51 g/100 g)and chitosan-coated peanut(0.28 g/100 g)(P<0.05),validating its superior antioxidative effect.This work provided a reference for applying ALA-CS composite films in antioxidant coatings for nuts.
