摘要

Abstract

Ginger holds a pivotal role within the Chinese medicine theory of food and medicine homology.Its active ingredients such as gingerols and shogaols have demonstrated notable pharmacological effects.This study investigates the impact of six traditional culinary method-pickling,decoction,infusion,fresh juicing,stir-frying,and steaming—on the efficacy of ginger,aiming to provide insights for the modernization of food and medicine homology.The findings revealed that these diverse cooking techniques construct a comprehensive application framework for ginger's food and medicine homology through component transformation and synergistic effects.It is imperative to consider the culinary method,consumption,and individual variations when utilizing ginger's medicinal and nutritional properties.Future research should prioritize the development of precise adaptation models,the promotion of ginger-based medicinal cuisine on a global scale,and the utilization of ginger by-products(e.g.,ginger residue)to promote sustainable industry development.
