摘要

Abstract

To clarify the chemical substance differences of white tea(Camellia sinensis(L.)Kuntze)from dif-ferent production areas in Guizhou,the tea samples of white tea from three production areas in Guizhou,namely Duyun,Shuicheng and Guiyang,were taken as the research objects.The non-volatile metabolites were studied by using non-targeted metabolomics technology combined with sensory evaluation analysis.The results showed that a total of 60 differentially expressed metabolites in 7 categories were identified,including 22 amino acids and their derivatives,17 flavonoids,7 sugars,6 organic acids,6 phenolic acids,1 alkaloid and 1 tannin.Among them,there were a total of 6 differential metabolites among the groups,including L-phenyl-alanine,L-ornithine,L-tryptophan,vitexin-2"-O-rhamnoside,gallocatechin-4α-8-epigallocatechin and myr-icetin 3-O-galactoside,which could be used as the characteristic differential metabolites to distinguish these three types of white tea from different production areas.KEGG metabolic pathway analysis indicated that the biosynthesis of amino acids and the related synthesis pathways of flavonoids were the main metabolic path-ways distinguishing white tea from the three production areas.The multiple metabolites detected could pro-vide important references for the quality difference analysis and production area identification of Shuicheng White Tea,Duyun White Tea and Guiyang White Tea.
