Abstract

To shorten the sublimation drying cycle of dragon fruit in vacuum freeze-drying,reduce carbon emissions during this stage and improve freeze-drying efficiency,the dragon fruit slices are subjected to vacuum freeze-drying at different pre-freezing temperatures(-20 ℃,-30 ℃ and-40 ℃).The sublimation drying rates and electricity consumption are analyzed under various conditions.The results show that the sublimation drying cycle of dragon fruit in vacuum freeze-drying is closely related to the pre-freezing temperature.When compared to a pre-freezing temperature of-20 ℃,a pre-freezing temperature of-30 ℃ reduces the sublimation drying time by 3 hours and decreases electricity consumption by 17.4%.It is demonstrated that adjusting the temperature during the pre-freezing stage can significantly shorten the sublimation drying cycle of dragon fruit in vacuum freeze-drying and effectively reduce carbon emissions in the sublimation drying phase.
