基于非靶向代谢组学的红曲菌发酵夏秋茶低分子成分分析
Analysis on Low Molecular Components of Summer-autumn Tea Fermented by Monascus Based on Untargeted Metabolomics

Abstract
[Objective]The effect of Monascus fermentation on low-molecular components of summer-autumn tea was investigated to provide the scientific basis for developing its characteristic functional components and metabolic pathways.[Method]The untargeted metabolomics of summer-autumn tea fermented by Monascus was analyzed by gas chromatography-mass spectrometry(GC-MS).The differential metabolites between the fermented and unfermented summer and autumn tea were screened.The differential metabolites were analyzed by KEGG metabolic pathway to explore the important metabolic pathways.[Result]There were 30 unique metabolites in summer-autumn tea fermented by Monascus,and 73 unique metabolites in unfermented summer-autumn tea.A total of 59 differential metabolites were screened,25 differential metabolites including taxifolin and caffeine were significant up-regulation.34 differential metabolites were significant down-regulation.The top 20 differential metabolites in summer-autumn tea fermented by Monascus,were divided into 7 kinds of substances of sugars,alkaloids,pyridines,alcohols,acids,lipids and flavonoids.9 metabolites and 11 metabolites were significant up-regulation and down-regulation respectively.All sugars substances were down-regulation almost,acids substances were significant down-regulation,and mannitol,erythritol and D-mannitol in alcohols were significant up-regulation.67 functional pathways were annotated by KEGG metabolic pathway analysis.10,38,7,1,8 and 3 pathways were related to the biological system,metabolism,human diseases,genetic information processing,environmental information processing and cellular processes,respectively.The nonalcoholic fatty liver,type Ⅱ diabetes mellitus and ABC transporter pathway were significant down-regulation.[Conclusion]The taxifolin and caffeine are the unique small molecular functional components of summer-autumn tea fermented by Monascus and the nonalcoholic fatty liver,type Ⅱ diabetes mellitus and ABC transporter pathway are the important differential pathways of summer-autumn tea fermented by Monascus,which suggests that summer-autumn tea fermented by Monascus has an application value in improving metabolic diseases.关键词
