Effects of Different Bacterial Reduction Treatment on Quality of Thunnus albacares During Storage

Abstract
[Objective]To compare the effects of peroxyacetic acid(PAA)and slightly acidic electrolyzed water(SAEW)treatments on the storage quality of yellow tuna(Thunnus albacares),and to selecte a more optimal antibacterial treatment method.[Methods]T.albacares fillets were treated with 40 mg/L PAA and SAEW for 5 minutes,with sterile deionized water as the control group.The changes in total bacterial count,pH,TBA value,hardness,biogenic amines,and TVB-N of fish fillets in different treatment groups were measured during refrigeration.[Results]PAA treatment significantly inhibited the growth of microorganisms during storage,and the logarithmic value of the initial colony count of fish fillets treated with 40 mg/L PAA for 5 min decreased by 0.65 compared with that of the control group,which was significantly lower than that of the SAEW and the control groups(P<0.05).After 7 days of storage,the pH value of the fillets in the PAA-treated group was 6.72,which was lower than that of the SAEW and control groups(P<0.05).Meanwhile,the TBA values of the fillets in the control,SAEW and PAA groups were 1.92,0.99 and 0.74,respectively,indicating that PAA could effectively reduce fat oxidation.The rate of increase of biogenic amines and TVB-N values of the fillets after PAA treatment were also significantly lower than that of the control and SAEW treated groups(P<0.05),and their hardness decreased most slowly.[Conclusion]The quality deterioration rate of T.albacares after 40 mg/L PAA treatment was the slowest,outperforming the SAEW treatment.关键词
