摘要

Abstract

Huaniu apple is highly favored by consumers due to its unique nutritional composition.This paper elaborated on the research status of Huaniu apple from two aspects of nutritional composition and industrial development,and reviewed the development and application of prebiotics.The pectin abundant in Huaniu apple is a soluble dietary fiber that can be partially or completely fermented in the large intestine,helping to control blood lipid and glucose levels in the human body,thereby demonstrating efficacy in preventing chronic diseases such as heart disease and diabetes.Prebiotics are food components resistant to gastric acid,mammalian enzymatic digestion,and gastrointestinal absorption.After colonic fermentation,they exert specific effects on the composition and metabolism of gastrointestinal microbiota,thereby benefiting host health.Based on the physiological effects of prebiotics and their applications in food processing,future research directions were proposed to provide references for the development and industrial promotion of Huaniu apple prebiotics.
