Analysis of Nutritional Composition of the Flowers,Stems and Leaves of Ottelia acuminata

Abstract
Exploring the composition of nutritional components in different parts of Ottelia acuminata can provide a scientific basis for its in-depth development and utilization.In this study,according to the national standard analysis method of food nutrients,ash,total sugar(measured by glucose),protein,crude fiber,fat,total flavonoids(measured by anhydrous rutin)and amino acids of the flowers,stems and leaves of O.acumi-nata collected from Yongfu County,Guilin City,Guangxi were detected and analyzed,and the essential amino acid nutrition was evaluated.The results showed that:(1)The protein content in flowers and leaves was sig-nificantly higher than that in stems,and the ash content in leaves was significantly higher than that in flowers and stems;(2)Essential Amino Acids/Total Amino Acids(EAA/TAA)in both flowers and leaves was high-er than the recommended standard of Food and Agriculture Organization of the United Nations/World Health Organization(FAO/WHO),and the distribution of essential amino acids in flowers was more bal-anced[the Score of essential amino acid Ratio Coefficient(SRC)=72.401];(3)The content of macroelement potassium was the highest in stems,calcium and magnesium were the highest in leaves,and the content of trace element iron was the highest in flowers;(4)The content of total flavonoids in flowers was the highest,and the content of vitamin C was second only to that in stems,which was significantly higher than that in leaves.This study reveals the organ distribution rule of nutrient compositions in O.acuminata:the flower is a high-quality protein source,the amino acid distribution balance is the best,and the total flavonoid content is the highest;the leaf is a compound supplement source of calcium,magnesium and selenium,and has the char-acteristics of low sodium and high potassium;the stem is rich in potassium.The results of this study can pro-vide a theoretical basis for the differential development and utilization of O.acuminata.关键词
