Abstract

[Objective]The aroma of mango is an important component of its quality and an important parameter for evaluating the overall quality of fruits.The paper aimed to understand the types and contents of volatile components(VCs)in different parts of mango of the main cultivars planted in Guangxi,clarify their characteristics,and provide theoretical basis for targeted regulation of mango flavor,high-value utilization of by-products,and variety breeding for deep processed mango products.[Method]Fruits of mango cultivars Guire 82 and Jinhuangmang harvested from commercial orchards in Baise and Nanning were selected as the experimental materials.VCs were isolated by headspace solid-phase micro-extraction(HS-SPME)and analyzed by gas chromatogra-phy-mass spectrometry(GC-MS).[Result]A total of 255 VCs were identified in all the samples.Terpenoids dominated both in number and relative abundance,and their distribution consistently fol-lowed the order of peel>pulp>kernel.In the samples of Guire 82 from Baise,73 VCs were identi-fied,which showed that peel contained the richest VCs of total 60,and the major VCs were terpin-olene(22.41%),3-carene(10.15%)and ocimene(6.67%);the VCs in pulp was characterized by ocimene(45.67%)and butyl butyrate(19.85%);and kernel contained mainly ocimene(26.09%)and dimethylsilanediol(14.45%).In the samples of Jinhuangmang from Baise,57 VCs were identi-fied,which showed the VCs in peel were dominated by isoterpinolene(26.81%)and(R)-isomen-thone(15.94%);those in pulp were mainly terpinolene(14.17%),ocimene(13.17%)and leaf al-cohol(11.98%);and those in kernel were dominated by dimethylsilanediol(47.28%).A total of 68 volatiles were detected in the samples of Guire 82 from Nanning.Among them,peel exhibited exceptionally high ocimene(36.71%)and γ-muurolene(7.94%),pulp mainly contained ocimene(55.76%)and α-pinene(8.32%),and kernel contained mainly ocimene(52.47%)and dimethylsi-lanediol(17.08%).The samples of Jinhuangmang from Nanning comprised 57 volatiles.Among them,peel featured terpinolene(17.55%)and β-selinene(13.66%),pulp contained mainly terpin-olene(31.21%)and 3-carene(16.07%),and kernel mainly contained α-pinene(33.25%)and di-methylsilanediol(16.66%).[Conclusion]Significant tissue-specific differences(P<0.05)in VCs composition were observed in mango fruits,and ocimene and dimethylsilanediol were ubiquitous key VCs.The VCs in fruits of the main mango cultivars grown in Guangxi were terpenoid-centric,with peel representing the most chemically diverse fraction,followed by pulp and kernel.
