Abstract

This study aims to investigate the factors influencing dextran formation in sugar production and to evaluate the effectiveness of conventional control measures employed in sugar mills.The goal is to provide new insights for reducing dextran generation and mitigating its negative impacts on sugar production and product quality.The differences in dextran content of Guangxi sugarcane varieties Guitang49 and Guiliu05136 after being stored for a certain period of time under manual and mechanical harvesting methods were compared.Additionally,dextran levels in cane(juice)fed into the mills were monitored across different crushing seasons and production regions.The efficacy of control strategies,including scientific cut-to-crush management,processing equipment sanitation,and the addition of enzyme preparations,was also assessed.The results revealed that cane storage method/duration,harvesting method,and variety significantly affected dextran formation.Mechanically harvested cane exhibited significantly higher dextran content than manually harvested cane,and prolonged storage led to increased dextran levels.Differences in resistance to dextran formation were observed between varieties,with Guitang49 showing better performance than Guiliu05136.Dextran generation also varied for the same variety across different production regions.Scientific cut-to-crush management and equipment sanitation effectively reduced dextran formation,while adding enzyme preparations significantly degraded existing dextran.In conclusion,dextran formation in sucrose production is influenced by multiple interrelated factors.Optimizing cane storage and harvesting methods,selecting resistant varieties,and implementing scientific management practices can effectively control dextran generation.Furthermore,the application of enzyme preparations serves as an effective means to remove already-formed dextran.
