Research Progress of Antioxidant Mechanism of Soy Isoflavones/Cy-clodextrin Inclusion Complexes Based on Nrf2 Signaling Pathway

Abstract
Soy isoflavones,as a natural plant compound with significant antioxidant activity,have limited applications in food due to their poor water solubility and low bioavailability.Cyclodextrins,with their unique structure that forms inclusion complexes,have become an important tool to improve the solubility and stability of soy isoflavones.This article focuses on the inclusion complex of soy iso-flavones/cyclodextrin,elaborating on its antioxidant activity and analyzing the mechanisms of encap-sulation and controlled release,with a particular emphasis on the antioxidant mechanism based on the Nrf2 signaling pathway.It explores the applications in functional foods to enhance solubility,pro-mote absorption,improve stability,and mask unpleasant flavors.It also looks forward to future devel-opments,providing a theoretical basis for the deep development and application of soy isoflavones.关键词
