奇亚籽油功能软糖的研制
Development of Functional Gummy Candy Containing Chia Seed Oil

Abstract
Chia seed oil is rich in polyunsaturated fatty acids,with a high content of alpha-linolenic acid reaching 68%,possessing bioactivities such as antioxidant,blood lipid-lowering,and anti-tumour effects.To expand the application of chia seed oil,this study improved the process by incorporating chia seed oil into gummy candies to develop functional gummies.Sensory quality was used as the evaluation criterion.The optimal formula and process for chia seed oil gummies were explored through single-factor experiments,response surface optimization tests,and the use of nonlinear models.The results indicate that the optimal formula for chia seed oil gummies after optimization is 0.33 g gelatin,0.8 g buckwheat honey,0.8 g lemon-kumquat juice,and 0.3 g chia seed oil.Gummies made according to this formula have a shiny appearance,moderate texture,unique flavour,meeting people's demand for highly nutritious food.关键词
