摘要

Abstract

As the second largest sugar crop in the world,sugar beet has high economic value.It is rich in polysaccharides and dietary fiber,and has a variety of biological activities,such as regulating blood glucose,lowering blood lipids,and regulating intestinal flora.In recent years,with the continuous progress of extraction technology,sugar beet polysaccharides and dietary fiber have been increasingly used in food processing,showing great potential for application.This paper reviews the structural characteristics and physicochemical properties of the polysaccharides and dietary fiber,introduces their main extraction methods,and explores their application prospects in functional foods,food additives,and animal feeds,aiming to provide a theoretical basis and reference for the deep processing and high-value utilization of sugar beet and its by-products.
