Abstract
Astaxanthin is a fat soluble carotenoid with good antioxidant activity,which is widely used in medicine,aquaculture,health food,cosmetics and other fields.Yeast has become the main source of producing high-value astaxanthin.In this paper,the synthesis pathway of exogenous astaxanthin contained in and introduced into yeast,the transformation of yeast by mutation breeding and genetic engineering,and the optimization of fermentation conditions were reviewed,in order to provide references for the development of astaxanthin related industries.关键词
