Abstract

To explore the differences in nutritional composition of red swamp crayfish(Procambarus clarkii)cultured populations in different regions,and to evaluate the nutritional composition of hepatopancreas and muscle tissues to provide reference for theoretical reference for the evaluation of germplasm resources of P.clarkii from different regional groups as well as the breeding of P.clarkii,P.clarkii from Chongming Shanghai,Gaoyou Jiangsu,and Xuancheng Anhui were selected under pond culture conditions.The differences in conventional nutritional composition,fatty acid and amino acid composition between liver,hepato pancreas,and muscle tissues were analyzed.The results showed that the crude protein and crude fat contents of the muscle of three groups were not significantly different(P>0.05),while the crude lipid of the hepatopancreas of the Chongming group was significantly higher than that of the Gaoyou and Xuancheng groups(P<0.05);in terms of fatty acid composition,ΣSFA and ΣMUFA of the Chongming group were significantly higher than that of the Xuancheng group(P<0.05),while DHA,EPA and n-3/n-6PUFA of the Gaoyou group were significantly higher than those of the Xuancheng group(P<0.05),EPA and n-3/n-6 PUFA were significantly higher in the Chongming group than in the other two groups(P<0.05);in terms of free amino acid composition in muscle tissue,a total of 18 free amino acids were detected,and the essential amino acid contents of the three groups were not significantly different(P>0.05),while the delicate amino acid content was significantly higher in the Chongming group than in the other two groups(P<0.05).The edible tissues of P.clarkii from all three regions exhibit rather high nutritional value,and the Chongming group P.clarkii has better flavor.
