摘要

Abstract

To evaluate the nutritional value of Creteuchiloglanis macropterus,the flesh content and muscle nutrient composition of wild C.macropterus adult fish were determined using conventional methods.The results showed that the average flesh content of C.macropterus was 70.09%.The moisture,crude protein,crude ash and crude fat content in the muscle was 78.34%,19.23%,1.21%and 1.17%,respectively.The muscle contained 18 kinds of amino acids,with a total mass accounting for 87.77%of the dry sample.There were 8 kinds of essential amino acids accounting for 41.65%of the total amino acid(TAA).The essential amino acid index(EAAI)was 71.72.The content of flavor amino acids descended in the order of sweet amino acids>bitter amino acids>sour amino acids>umami amino acids.The content of umami amino acids was 23.79%of the total mass of amino acids.The muscle contained 14 kinds of fatty acids with the rate of 3.99%of the dry sample,including 5 kinds of saturated fatty acids(SFA),3 kinds of monounsaturated fatty acids(MUFA)and 6 kinds of polyunsaturated fatty acids(PUFA).The mass fractions of EPA and DHA were 8.46%and 11.16%,respectively.The muscle was rich in mineral elements such as K,Ca,Fe,Zn,and Cu.The ratio of Zn to Fe was 0.59,and the ratio of Zn to Cu was 8.92.The results indicate that C.macropterus has a high flesh content,high protein,low fat,balanced and rich amino acids,and is rich in minerals.It can be developed and promoted as a high-quality aquatic product.
