摘要

Abstract

Through the analysis and exploration of ancient literature as well as recent research on the fermentation of Huangjing(Polygonati Rhizoma),this study summarizes aspects such as fermentation strains,process methods,and efficacy mechanisms,revealing that several issues still persist in current research on Huangjing(Polygonati Rhizoma)fermentation.At present,there is a rich variety of related products,with technologies like solid-state fermentation and liquid-state fermentation being applied.However,prevalent problems include confusion regarding the botanical origin of Huangjing(Polygonati Rhizoma),a lack of unified process standards,and contradictions in the mechanisms of material transformation.Based on a systematic analysis of the deficiencies in existing research,this study aims to provide theoretical support and practical directions for the in-depth development and rational utilization of Huangjing(Polygonati Rhizoma)fermentation products.
