日照林下茶与露天茶品质及代谢差异分析
Analysis of Quality and Metabolic Differences Between Under-forest and Open-air Tea in Rizhao

Abstract
In order to explore the quality and metabolic differences between under-forest tea and open-air tea in Rizhao,this study systematically compared them in different seasons through sensory evaluation and quality biochemical component analysis combined with non-targeted metabolomics technology.The results show that in terms of sensory quality,the aroma and taste of under-forest tea were better than those of open-air tea,which was characterized by floral and fruity aroma and fresh and sweet taste.There were seasonal differences in the biochemical components,and the contents of tea polyphenols and flavonoids in spring under-forest tea were high,while the contents of tea polyphenols and flavonoids in summer and autumn open-air tea were higher.The caffeine content of open-air tea was high in spring and summer,but the caffeine content of under-forest tea was higher in autumn.The metabolic analysis shows that a total of 2 740 metabolites were identified in both under-forest and open-air tea,733 of which were differentially expressed.These focused mainly on amino acid and derivative synthesis,as well as alkaloids,lipid and carbohydrate metabolism,and metabolic pathways such as cofactors and vitamins.Compared with open-air tea,the amino acids and lipid me-tabolites of under-forest tea show a downward trend as a whole.The down-regulated metabolites included ergothioneine,D-(-)-glutamine,ethyl 3-oxyacetate,DL arginine,glycosamine and ethyl 3-oxyacetate.Conversely,the alkaloid and sugar metabolites of under-forest tea show an up-regulated trend.The up-regulated metabolites included L-histidine betaine,rutin and leutaxel glucoside.关键词
