金煌芒采后果皮细胞壁物质代谢与抗氧化酶活性研究
Study on Substance Metabolism and Antioxidant Enzyme Activity of Peel Cell Wall of Postharvest Jinhuang Mango

Abstract
[Objective]The changes in substance metabolism and antioxidant enzyme activity of peel cell wall of postharvest Jinhuang mango were investigated to provide a reference for storage and preservation of Jinhuang mango.[Method]The peel hardness,cell wall substance content,cell wall degrading enzyme activity and antioxidant enzyme activity of physiological maturity mango fruits were determined on 0 d,4 d,8 d and 12 d storage at room temperature after harvest to analyze the main reason to cause mango fruit softening.[Result]With the extension of storage days,the peel hardness of Jinhuang mango gradually decreased,the fruit softening speed was slow during 0-4 d storage,and the fruit softening speed increased during 8-12 d storage.The content of total pectin(TP),protopectin(PP)and cellulose(CEL)in peel decreased significantly,the soluble pectin(SP)content in peel increased significantly and the activity of polygalacturonase(PG),pectinesterase(PME)and cellulase(Cx)in peel showed a rising trend during storage of mango fruits.The activity of superoxide dismutase(SOD)and peroxidase(POD)showed a declining trend,and the catalase(CAT)activity showed a decreasing first and then increasing trend.The peel hardness was closely related to substance content,degrading and antioxidant enzyme activity of cell wall.The fruit hardness was positively related to protopectin(PP)content and POD activity significantly and negatively related to polygalacturonase(PG)and pectinesterase(PME)activity significantly.[Conclusion]The change in peel texture of Jinhuang mango is regulated by many enzymes of PG,PME,Cx,SOD and POD.The increase of cell wall degrading enzyme activity and degradation of cell wall substances in peel are the main reasons to cause softening of Jinhuang mango fruits.关键词
