Abstract

Three strains of galactomyces yeast were investigated to assess dynamic changes in antioxidant activity during fermentation.The DPPH radical scavenging activity of the fermentation filtrate from strain 2A9 peaked at 75.68%±1.71%(equivalent to 142.5 mg Vc/L)at 87 h,while strains 61B1 and 1H1 reached optimal activity at the fermentation endpoint(96 h).Non-targeted LC-MS metabolomics combined with OPLS-DA modeling identified 30 significantly differentially expressed metabolites(VIP>1,P<0.05),predominantly enriched in the"glutathione metabolism,""pantothenate and CoA biosynthesis,"and"tryptophan metabolism"pathways.Key differential metabolites—including L-glutamic acid,glutathione,hydroxycinnamic acid,acetyl-L-carnitine,L-phenylalanine,and isoflavonoids(genistein,daidzein aglycone)—likely underlie the differences in antioxidant capacity among the three fermentation filtrates.This study elucidates the metabolic profile variations of galactomyces fermentation filtrates,providing a theoretical foundation for their potential applications.
