微流水净养对三角鲂商品鱼品质提升的影响
Effects of Gentle Water Flow Purification on Improving the Quality of Commercial Megalobrama terminalis

Abstract
[Objective]This study aims to explore an ecologically sound method of purifying aquaculture environments to enhance the quality of Megalobrama terminalis,particularly in improving its flesh texture and sensory characteristics.[Method]Using commercial M.terminalis as the research subject,the experiment combined fasting with gentle water flow purification over 28 days.Indicators such as body weight,visceral index,muscle texture,nutritional composition,and sensory evaluation were measured and analyzed.[Result]The results showed that gentle water flow reduced body weight,liver-body ratio,viscera-body ratio,and intestine-body ratio,with the liver-body ratio notably decreasing by 0.60 percentage points after 28 days.Simultaneously,the cohesiveness and chewiness of the fish muscle were significantly enhanced,reaching 1 830.11 g and 146.26 mJ,respectively,on day 14,markedly higher than pre-treatment levels.Additionally,muscle water-holding capacity improved significantly,with the centrifuge water loss rate dropping to just 5.42%after 28 days.Moreover,the earthy and fishy odors were sig-nificantly diminished,and overall sensory evaluation scores were notably increased.[Conclusion]This study demonstrates that gentle water flow purification can effectively improve the flesh quality and sensory attributes of commercial M.terminalis,providing a scientific basis for en-hancing the quality of freshwater-farmed fish.It also offers a novel solution for balancing high-quality production with economic efficiency in aq-uaculture.关键词
