Analysis of volatile components in Perilla frutescens leaves of three varieties at different growth stages using HS-GC-IMS

Abstract

In order to investigate the differences in volatile organic compounds(VOCs)among three varieties of Perilla frutescens leaves at different growth stages,the leaves collected at the jointing period,flowering periods and defoliation periods of three varieties were analyzed using headspace-gas chromatography-ion mobility spectrometry(HS-GC-IMS)to determine the composition and relative content of VOCs.Multivariate statistical analysis was performed on the data using chemometric methods.The results showed that a total of 102 characteristic peaks are detected in Perilla frutescens leaves of the three varieties at different growth stages,and 72 VOCs(including monomers and dimers)are identified,including esters,alcohols,aldehydes,ketones,terpenes,phenols,and furans.Among them,esters and alcohols are the most abundant,accounting for more than 30%of the total relative content of VOCs.HS-GC-IMS fingerprints,combined with principal component analysis(PCA)and orthogonal partial least squares-discriminant analysis(OPLS-DA),revealed that there are significant differences in VOCs among Perilla frutescens leaves at different growth stages,whereas only minor differences are detected among the three varieties.Based on the variable importance in the projection(VIP)values,23 compounds with VIP>1 are screened as specific marker VOCs for distinguishing Perilla frutescens leaves at different growth stages.This study provides a theoretical and experimental basis for the development and application of Perilla frutescens leaves.
