山东省沿海地区居民蓝色食物消费特征及影响因素分析
Characteristics and Influencing Factors of Blue Food Consumption among Residents in Coastal Areas of Shandong Province

Abstract
Blue food is an inevitable requirement for the construction of a diversified food supply system in the context of the greater food concept,and it is of great significance for guaranteeing national food security,improving the dietary quality of the residents,and alleviating the environmental pressure of food consumption.The article obtained data on blue food consumption characteristics of residents in coastal areas of Shandong province through a questionnaire survey and analyzed the influencing factors,paths and degree of influence of their consumption behaviors using structural equation modeling.The results showed that residents usually buy and consume blue food at home from farmers'markets and aquatic product markets,mainly purchasing seawater fish,seawater shrimp and seaweeds,and in general,the consumption of seawater products is more than that of freshwater products;the most popular frozen and processed blue food for residents in coastal areas are frozen fish and frozen shrimp,and there is very little consumption of high-level health care products and so on.Moreover,individual and family factors,socio-cultural factors,blue food factors and environmental effect factors all affect the consumption of blue food by coastal residents to different degrees,with the degree of influence showing that individual and family factors>blue food factors>socio-cultural factors>environmental effect factors.Based on this,in the future,we should strengthen the science popularization of the nutritional value and environmental effects of blue food,disseminate the special dietary culture of coastal areas,and improve the level of deep processing of blue food.关键词
