Abstract

To determine the degradation pattern of the red pigment from pitaya peel at different ethanol concentrations and predict the stability of alcoholic and nonalcoholic beverage products containing this pigment,the red pigment(from Jindu No.1 pitaya variety)was extracted with a 70%ethanol aqueous solution,concentrated,and separated with AB-8 macroporous resin.The absorbance values of the red pigments in ethanol concentrations of 0%,10%,20%,30%,40%,50%,and 60%were meas-ured.The results showed that the AB-8 macroporous resin effectively enhanced the concentration of the red pigment from pitaya fruit peel.The color value of the purified sample(AB-8)was 38 times greater than that of the control sample(CTR).Under the conditions of 25℃and pH 4.0,the degradation of the red pigment from pitaya peels in different ethanol concentra-tions followed a first-order degradation reaction.As the ethanol concentration increased,the degradation reaction rate K in-creased,and the half-life decreased.These results can be used to predict the shelf-life of pitaya beverage products.
