Abstract

Meat and meat products will seriously harm the health of consumers once they are eaten after spoilage.Therefore,it is important to detect the freshness of meat and meat prod-ucts.Food intelligent indication label mainly through monitoring the food in the package or the internal environment changes,to obtain the quality and safety of food during storage and transportation information,with real-time,non-destructive,intuitive and other characteris-tics,has become a research hotspot in the detection of food freshness.An H2S responsive gel-lan/silver nanoparticles/agar indicator label was prepared and applied to the freshness detec-tion of cold fresh meat.The results show that silver nanoparticles with good stability can be obtained by using gellan gum as reducing agent and ending agent.A noticeable color change(yellow-colorless)occurs when gellan gum/silver nanoparticles solution is exposed to H2S.Gellan gum/silver nanoparticles/agar indicator label was applied to the freshness monitor of cold fresh meat.The label changed color or faded from yellow,which could identify the fresh-ness of cold fresh meat accurately,quickly and at low cost.The results have important appli-cation value for the development of food intelligent packaging and the quality monitoring of meat and meat product.
