市售12个品牌澳洲坚果开口壳果产品质量指标分析与评价
Analysis and evaluation of the quality indicators of shell-sawed macadamias of 12 market brands

Abstract
In order to investigate and analyze the quality and quality status of pre-sawed in-shell macadamias products available in the market,the opening width,opening radian,opening quality,kernel rate,impurity content,and defective rate of 12 brands of shell-sawed macadamias products were determined,and hierarchical cluster analysis was further performed on the determined data.The results showed that there were significant differences in the quality of shell-sawed macadamias products.The median o-pening width was 0.9-1.2 mm,the median opening radian was 218°-282°,the proportion of unsliced nuts was 0%-1.96%,the kernel damage rate was 59.66%-93.05%,and the proportion of nuts with substandard slicing was 0%-1.89%.Analysis of the effect of kernel extraction found that there were no difficult to open or completely opened nuts in 12 brands of products.The proportion of incompletely opened shells was 0%-5.66%,and the proportion of shell-sticky kernels was 3.54%-35.95%.The kernel rate was 33.92%-40.82%,and the impurity content was 0.102%-0.006%.No wormholes were found on the shells,but there were some defects such as scratches and black spots,accounting for 3.58%-52.27%.The kernels had different types of defects,such as rancidity,worm damage,shrinkage,browning,and oil exudation,and the total proportion of defective kernels was 0%-7.73%.Hierarchical cluster analysis grouped 12 brands into two categories,and brand 11 was grouped separately into one group due to poor performance in multiple indicators.There are differences in raw material selection and processing control a-mong different brands,so pre-sawed in-shells macadamias factories should strictly control the quality of raw material and improve processing technology and equipment to improve products quality.关键词
