Effects of Different Storage Temperatures on the Quality of Ganoderma lucidum

Abstract
Taking the Ganoderma lucidum from Anhui as the test material,the storage treatment method of Ganoderma lucidum at different temperatures(—20,0,4,8℃,and room temperature)was adopted.The effects of different storage temperatures on the active components(Ganoderma polysaccharides,nucleoside components,and ganoderma acids)and antioxidant capacity(DPPH radical scavenging capacity and FRAP reducing power)of Ganoderma lucidum were studied,in order to provide a reference for the storage quality research and deep processing of Ganoderma lucidum.The results showed that with the extension of storage time,the low temperature storage effect was generally better than that at room temperature.Under the storage condition of 4℃,the contents of Ganoderma polysaccharides,nucleoside components,and ganoderma acids in Ganoderma lucidum,as well as the DPPH radical scavenging capacity and FRAP reducing power,were generally higher than those in other temperature treatment groups.Through comprehensive comparison,the storage effect of Ganoderma lucidum at 4℃ was the best.In conclusion,low temperature storage can effectively maintain the quality of Ganoderma lucidum.关键词
