Abstract

In this study,the earthworm protein hydrolysates were prepared through enzymatic hydrolysis,and the antioxidant activity in vitro of the hydrolysates produced by different proteases was compared and analyzed.Earthworm protein was first extracted via alkali extraction and acid precipitation.Subsequently,five hydrolysates were generated using pepsin,trypsin,papain,neutral protease,and alkaline protease.The BCA protein assay measured the hydrolysate concentrations.Three antioxidant methods in vitro(DPPH radical scavenging,ABTS radical scavenging,and Fe3+reducing power assay)were used to evaluate the antioxidant effects.The experimental results show that the yield of earthworm protein hydrolysates for the alkali-extracted acid-precipitated earthworm protein is 5.57 g(11.14%).All five hydrolysates have the antioxidant activity in vitro.Papain hydrolysate exhibites the strongest antioxidant capacity in both DPPH radical scavenging and Fe3+reducing power tests.Neutral protease hydrolysate show the highest activity in ABTS radical scavenging.This study compared the antioxidant effects in vitro of the enzymatic hydrolysates of earthworm protein obtained through different proteases,which can provide a reference for the development and utilization of earthworm protein resources.
